Simmer and strain the syrup

Cover and reduce heat to simmer for 15 minutes. Strain through a fine-mesh strainer before storing. Cool completely. 3. **Make the chicha de arroz** (make ahead) Combine rice milk, sweetened condensed milk, evaporated milk, and ground cinnamon in a blender. Blend until completely smooth.

Store refrigerated and use within 3 days.

Prepare the cocktail

Add cinnamon simple syrup, chicha de arroz, and mezcal to a shaker filled with ice.

Shake and double strain

Shake vigorously for 15 seconds. Double strain into a rocks glass over a single jumbo ice cube.

Double straining removes any ice chips and ensures a silky texture.

Garnish and serve

Gently bruise the mint leaves to release their oils and place them on the surface of the drink.

The mint should float as an aromatic garnish, not be muddled into the drink.
